If you run a food business, your Food Hygiene Rating is one of the most visible signals of trust you have. But the number on the sticker can feel mysterious. Here is what it actually measures.
The three things that are scored
Every inspection looks at three areas:
- Hygienic food handling — how food is prepared, cooked, cooled, stored and handled.
- The condition of the structure — cleanliness, layout, lighting, ventilation, pest control and the state of the premises.
- Confidence in management — how well you manage food safety and, crucially, how well you can evidence it with records.
That third area surprises a lot of people. You can run a clean kitchen and still lose marks simply because your records do not back it up.
Why the rating is not just about cleanliness
A spotless kitchen with no documentation is a risk in an officer's eyes, because there is nothing to show standards are consistent. The good news: this is one of the easiest areas to fix with a bit of structure.
The fastest wins are almost always in records and routines, not in expensive equipment.
